While elite Thoroughbreds gear up for the Belmont Stakes in Saratoga Springs, another horse has already stolen the spotlight—though she’s more glitter than gallop. Meet Pancakes the Wonder Horse, our very own brunch-fueled, disco-dazzled race-day pony here at High Peaks Canna.
From Forgotten Carousel to Saratoga Icon
Pancakes’ journey to stardom began in a quiet corner of Adams, Massachusetts, where she stood—plastic, proud, and completely abandoned. But her story was far from over.
Gabi and David from the High Peaks crew spotted her and knew this wasn’t just a lawn ornament—it was a destiny in waiting. They drove across three states to bring her home to Saratoga for Belmont Week, but there was just one catch: Pancakes refused to get in the truck… until she was fed brunch.
Yes, she’s powered by carbs. We respect that.
The Belmont Glow-Up
Once safely back in Saratoga Springs, Pancakes received the royal treatment. After a deep clean, Gabi worked her magic—coating our Pure Brunch Horse in glimmering disco ball glass tiles. The result? A full-blown glow-up. Pancakes became a walking (well, stationary) celebration of hope, humor, and high-glam equine fashion.
Now gleaming in the shop, she’s officially living the dream she’s always had: from a forgotten Christmas decor in Massachusetts to life as a Dispo Disco Pony in one of horse racing’s most iconic towns.

Long Reins and Disco Dreams
Not every horse gets to run in the Belmont Stakes. But Pancakes? She’s already won. With her mirror-tile coat and carb-fueled spirit, she represents everything we love about this town: character, creativity, and a little bit of sparkle.
So here’s to Belmont 2025. Here’s to Pancakes. And here’s to the belief that dreams really do come true—even for brunch-powered plastic ponies.
